Recipes

Fried– Soak in Sprite overnight, pound the marinated breast out, put in egg wash, dip in Italian Breadcrumbs and Panko and deep fry. Works well with redheads and buffleheads.

Jerky- Soak in a teriyaki marinade or any other marinade of choice for two days, pound them out and throw in dehydrator. Works well with all the birds we shoot.

Oven- Overnight the breast with salt brine, pat the breast dry and coat with honey sprinkled with a mix of crunchy fennel seeds, coriander seeds, and cumin seeds. Bake in cast iron pan at a very high temperature 500 until breast reach 135. Let breast rest on plate and de glaze the cast iron with shallots, white wine, vinegar, and butter. Balsamic vinegar also works and pour the glaze over well rested duck breast. Works best with Pintails.

Crockpot- Breast the birds out throw into crockpot with quartered onion, cover breast with BBQ sauce ¼ cup of vinegar, ½ cup of brown sugar, 2-4 cloves of garlic, chili powder. Cook until meat can easily be pulled apart. Works best with Brant.

Grilled- Marinate breast in Worcestershire sauce for 24 hours, throw bacon on for quick char. Throw breast on tin foil or well-seasoned grill for quick char. Slice jalapenos and throw on grill for quick char. Once everything is charred spoon cream cheese onto the breast then jalapenos and then wrap in bacon and grill at high temp both sides till crispy. Works for all the birds we shoot.

Buffleheads

Male- Small duck with large head and short bill, Large white patch on head, dark back, white chest and flanks are visible from long distances. Purple-green iridescence on the head can be hard to see from long distance.

Female- Small Brownish duck with large, rounded head and distinctive, single white patch on the cheek.

Pintails

Male- A long-necked duck. Breeding males have a very long tail a white breast, and a white neck stripe.

Females- Slender duck with a long tail and neck. Females have rather plain tan heads compared to other female ducks.

Brants

A compact goose with a brownish back, and pale underparts. Adults will have an incomplete white necklace and a pale belly contrasting strongly with the black chest and neck. Males will typically be slightly larger than females.

Redheads

Male- Medium-sized diving duck with a steep forehead that meets the bill at a sharp angle. Cinnamon-red head, black chest and rear, and gray body. Bill is light blue gray with a black tip.

Female- Medium-sized diving duck with a steep forehead and an abrupt transition to the bill. Medium brown overall with a pale face and a dark gray bill with a black tip.
